  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons poppy seeds
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • 1 cup fresh blackberries
  • 2 cups powdered sugar
  • ½ cup cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in lemon zest and poppy seeds.
  6. Alternately add the flour mixture and buttermilk to the creamed mixture, starting and ending with flour.
  7. Fill cupcake liners about 2/3 full and bake for 18-20 minutes.
  8. Meanwhile, for the frosting, blend blackberries until smooth and strain to remove seeds.
  9. In a bowl, beat cream cheese and add powdered sugar gradually, mixing in blackberry puree until smooth.
  10. Once cupcakes have cooled, frost with blackberry frosting.

Notes

  • For more lemon flavor, add more lemon zest to the batter.
  • Store cupcakes in an airtight container.
