  • 1 cup Romano cheese, grated
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup olive oil
  • 1/2 cup lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Coat each chicken breast in flour, shaking off the excess.
  4. Beat the eggs in a shallow bowl, then dip the floured chicken breasts into the eggs.
  5. Coat the chicken with grated Romano cheese.
  6. Heat olive oil in a pan over medium heat and cook the chicken breasts for 3-4 minutes on each side until golden brown.
  7. Transfer the chicken to a baking dish and drizzle lemon juice over the top.
  8. Bake in the preheated oven for 20-25 minutes until cooked through.
  9. Garnish with chopped parsley before serving.
