  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth.
  4. Add lemon juice, lemon zest, eggs, and vanilla extract. Mix until well combined.
  5. Pour the cheesecake mixture over the crust in the springform pan.
  6. Bake for 50-60 minutes until set. The center should slightly jiggle.
  7. Turn off the oven and let the cheesecake cool inside for 1 hour.
  8. Refrigerate for at least 4 hours before serving.
