  • 1 lobster tail, cooked and chopped

  • 1 small shallot, finely chopped
  • 2 cloves garlic, minced

Instructions

  1. In a saucepan, warm chicken broth over low heat.
  2. In a large skillet, melt butter over medium heat and add shallot and garlic. Sauté until translucent.
  3. Add Arborio rice and stir to coat in the butter, cooking for 1-2 minutes.
  4. Pour in white wine and cook until absorbed.
  5. Gradually add warm chicken broth, one ladle at a time, stirring constantly until the liquid is absorbed.
  6. Once the rice is creamy and al dente, stir in heavy cream, lemon juice, lemon zest, and Parmesan cheese.
  7. Fold in the chopped lobster and season with salt and pepper.
  8. Serve hot, garnished with additional lemon zest and parsley if desired.
