  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup honey
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 tablespoons honey (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine cornmeal, flour, baking powder, and salt.
  3. In another bowl, whisk together milk, eggs, honey, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into prepared cake pans and bake for 25-30 minutes.
  6. Let the layers cool completely.
  7. In a mixing bowl, whip the heavy cream with powdered sugar until soft peaks form.
  8. Fold in the additional honey into the whipped cream.
  9. Layer the cornbread with the whipped honey butter frosting and serve.
