Irresistibly Creamy Zucchini Rollatini You'll Crave All Week

A delicious and creamy zucchini rollatini recipe that you won’t be able to resist all week long.

Ingredients

  • 4 medium zucchinis
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix ricotta, mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper.
  4. Spread some marinara sauce on the bottom of a baking dish.
  5. Fill each zucchini slice with the cheese mixture and roll it up.
  6. Place the rolled zucchini in the baking dish seam side down.
  7. Cover with remaining marinara sauce and sprinkle with extra cheese.
  8. Bake for 25-30 minutes until bubbly and golden.

Notes

  • For a spicier version, add red pepper flakes to the cheese mixture.
  • These rollatini can be made ahead of time and stored in the fridge before baking.
