Instant Pot Mushroom Wild Rice Soup

A warm and hearty soup perfect for chilly nights, made effortlessly in your Instant Pot.

Ingredients

  • 1 cup wild rice
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup heavy cream (optional)

Instructions

  1. Turn on the Instant Pot and set it to sauté mode. Add olive oil and onion, sautéing until translucent.
  2. Add garlic and mushrooms, cooking until softened.
  3. Add carrots, celery, wild rice, thyme, salt, and pepper, stirring to combine.
  4. Pour in the vegetable broth and close the lid securely.
  5. Set the Instant Pot to manual mode for 30 minutes.
  6. Once done, allow for natural pressure release for 10 minutes, then release any remaining pressure manually.
  7. Stir in heavy cream if desired before serving.

Notes

  • This soup can be made vegan by omitting the heavy cream.
  • Feel free to add other vegetables to the mix for extra nutrition.
