High Protein Steak Fajita Bowl

Ingredients

  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked brown rice
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add flank steak and cook until browned, about 5-7 minutes. Remove and slice.
  3. Add peppers and onion to the same skillet, cooking until softened.
  4. Add garlic and spices, cooking for another minute.
  5. Mix in the cooked rice, black beans, and corn, stirring until combined.
  6. Serve the mixture in a bowl, topped with sliced avocado and cilantro.
