- 1 pound flank steak
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked brown rice
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn
- 1/4 cup fresh cilantro, chopped
- 1 avocado, sliced
- Heat olive oil in a skillet over medium-high heat.
- Add flank steak and cook until browned, about 5-7 minutes. Remove and slice.
- Add peppers and onion to the same skillet, cooking until softened.
- Add garlic and spices, cooking for another minute.
- Mix in the cooked rice, black beans, and corn, stirring until combined.
- Serve the mixture in a bowl, topped with sliced avocado and cilantro.
