High Protein Chicken Ranch Quesadilla – Crispy & Low Carb!

A delicious and healthy high-protein chicken ranch quesadilla that’s crispy and low carb!

Ingredients

  • 1 cup cooked shredded chicken
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese
  • 4 low carb tortillas
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions

Instructions

  1. In a bowl, mix the shredded chicken with ranch dressing.
  2. Heat a skillet over medium heat.
  3. Place one tortilla in the skillet and top with a portion of the chicken mixture, cheese, bell peppers, and green onions.
  4. Place another tortilla on top and cook until golden, then flip and cook the other side.
  5. Remove from skillet, slice, and serve.

Notes

  • For a spicier version, add some jalapeños to the filling.
  • Use low-fat cheese to reduce calories further.
