High Protein Broccoli Cheddar Soup

Ingredients

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk or dairy alternative
  • 2 cups cooked chicken, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until soft.
  3. Stir in broccoli and vegetable broth, bring to a boil.
  4. Reduce heat and simmer until broccoli is tender.
  5. Blend soup until smooth, return to pot.
  6. Stir in cheese, milk, and chicken; heat through.
