Herby Avocado Egg Salad (10-minute!)

A delicious and quick Herby Avocado Egg Salad that can be prepared in just 10 minutes.

Ingredients

  • 4 large eggs
  • 1 ripe avocado
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Boil the eggs for 8-10 minutes and let them cool.
  2. Peel the eggs and chop them.
  3. In a bowl, mash the avocado and mix in lemon juice, dill, salt, and pepper.
  4. Add the chopped eggs to the avocado mixture and stir gently.
  5. Serve immediately or chill in the fridge for a bit.

Notes

  • Best enjoyed fresh, but can be stored for a day in the fridge.
  • Great as a sandwich filling or on a bed of greens.
