Heavenly Savory Garden Zucchini Casserole

  • 4 cups zucchini, sliced
  • 1 cup turkey bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 3 large eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the turkey bacon until crispy and set aside.
  3. In a large mixing bowl, combine the zucchini, onion, garlic, and cooked turkey bacon.
  4. In another bowl, whisk together the eggs, milk, salt, pepper, and oregano.
  5. Pour the egg mixture over the zucchini mixture and stir to combine.
  6. Transfer the mixture to a greased casserole dish and top with shredded cheddar cheese.
  7. Bake for 30-35 minutes or until the casserole is set and golden on top.
