Hearty Cheddar Garlic Herb Potato Soup

A comforting and delicious potato soup infused with cheddar, garlic, and herbs, complemented by crispy turkey bacon.

Ingredients

  • 4 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy. Remove and set aside.
  3. Add onion and garlic to the pot and sauté until translucent.
  4. Add diced potatoes, vegetable broth, thyme, salt, and pepper. Bring to a boil and then reduce heat.
  5. Simmer until potatoes are tender, about 15-20 minutes.
  6. Stir in heavy cream and cheddar cheese, stirring until melted and creamy.
  7. Serve hot, topped with crispy turkey bacon.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • You can use low-fat cream for a lighter soup.
