Hearty Cheddar Garlic Herb Potato Soup

A delicious and comforting potato soup packed with cheddar, garlic, and herbs, topped with crispy turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add the onion and garlic to the pot and sauté until translucent.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in the heavy cream, cheddar cheese, parsley, and thyme. Cook until cheese is melted.
  5. Serve hot, topped with crumbled turkey bacon.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
