  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the almond flour, coconut oil, and maple syrup.
  3. Press the mixture into the bottom of a lined baking dish to form the crust.
  4. In another bowl, beat together the cream cheese, Greek yogurt, honey, and vanilla extract until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Gently fold in the raspberries.
  7. Pour the cheesecake mixture over the crust and spread evenly.
  8. Bake for 25-30 minutes or until set.
  9. Allow to cool, then refrigerate for at least 2 hours before serving.
