Ingredients

  • 2 cups rotini pasta
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cucumber, cherry tomatoes, red onion, parsley, and feta cheese.
  3. Add the cooled pasta to the veggie mixture.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss gently to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
