Ingredients

  • 2 grilled chicken breasts
  • 1 large sweet potato
  • 1 cup quinoa
  • 2 cups spinach
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Peel and chop the sweet potato into cubes, then toss with olive oil, paprika, garlic powder, salt, and pepper.
  3. Grill the sweet potato for about 15 minutes, turning occasionally, until tender.
  4. Cook quinoa according to package instructions.
  5. Grill the chicken breasts for about 6-7 minutes on each side until cooked through.
  6. In a bowl, layer quinoa, grilled chicken, grilled sweet potato, and fresh spinach.
