Greek Chicken Meatballs with Lemon Orzo

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh dill, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, parsley, oregano, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Drizzle the meatballs with olive oil and bake for 20-25 minutes until cooked through.
  5. While the meatballs are baking, cook the orzo in chicken broth according to package instructions.
  6. Once cooked, drain the orzo and stir in lemon juice, lemon zest, and dill.
  7. Serve the meatballs over the lemon orzo.

Notes

  • For extra flavor, use homemade chicken broth.
  • Feel free to add vegetables to the orzo.
