  • 1/2 cup breadcrumbs

  • 1 egg
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, and pepper. Shape into meatballs.
  2. Heat olive oil in a skillet over medium heat. Cook the meatballs until browned on all sides.
  3. In another pot, bring chicken broth to a boil and add orzo. Cook until al dente.
  4. Add lemon juice to the orzo and stir in chopped parsley.
  5. Serve meatballs over orzo, garnished with extra parsley if desired.
