Fresh Raspberry Tiramisu

A delightful twist on the traditional tiramisu, featuring fresh raspberries that add a burst of flavor and a vibrant color.

  • 1 cup fresh raspberries
  • 1 1/2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed coffee, cooled
  • 12 ladyfinger cookies
  • 2 tablespoons cocoa powder, for dusting

Instructions

  1. In a large mixing bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla extract. Whip until soft peaks form.
  2. Dip ladyfinger cookies into the cooled coffee briefly and arrange them in a layer in a dish.
  3. Spread half of the mascarpone mixture over the ladyfingers and top with half of the raspberries.
  4. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and raspberries.
  5. Refrigerate for at least 4 hours or overnight to set.
  6. Before serving, dust with cocoa powder.

Notes

  • For a stronger coffee flavor, use espresso instead of brewed coffee.
  • Fresh raspberries can be substituted with other berries if desired.
