- 1 cup fresh raspberries
- 1 1/2 cups mascarpone cheese
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup brewed coffee, cooled
- 12 ladyfinger cookies
- 2 tablespoons cocoa powder, for dusting
- In a large mixing bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla extract. Whip until soft peaks form.
- Dip ladyfinger cookies into the cooled coffee briefly and arrange them in a layer in a dish.
- Spread half of the mascarpone mixture over the ladyfingers and top with half of the raspberries.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and raspberries.
- Refrigerate for at least 4 hours or overnight to set.
- Before serving, dust with cocoa powder.
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
