Fresh Raspberry Tiramisu

Indulge in a delightful twist on the classic tiramisu with fresh raspberries.

Ingredients

  • 1 cup fresh raspberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed coffee, cooled
  • 20 ladyfinger cookies
  • 1 tablespoon cocoa powder

Instructions

  1. In a large bowl, whip together the heavy cream, sugar, and vanilla until soft peaks form.
  2. Gently fold in the mascarpone cheese until smooth.
  3. Dip each ladyfinger in the cooled coffee for a few seconds and layer them in a serving dish.
  4. Spread half of the mascarpone mixture over the ladyfingers, then top with raspberries.
  5. Repeat the layers, ending with the mascarpone mixture on top.
  6. Dust with cocoa powder and refrigerate for at least 4 hours before serving.

Notes

  • For a more intense coffee flavor, you can use espresso instead of brewed coffee.
  • Feel free to add more fresh raspberries on top before serving for extra color and flavor.
