  • 2 large eggs
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup milk
  • 1/4 teaspoon baking powder
  • 1 tablespoon unsalted butter, for cooking

Instructions

  1. Separate the egg whites and yolks into two bowls.
  2. In the bowl with yolks, add sugar, milk, and vanilla extract, then mix well.
  3. Sift in the flour and baking powder, and mix until no lumps remain.
  4. In the egg whites bowl, beat until soft peaks form, then gradually add sugar and beat until stiff peaks form.
  5. Fold the egg whites into the yolk mixture carefully.
  6. Heat a non-stick skillet over low heat, and grease with butter.
  7. Pour some of the batter into the skillet and cover with a lid. Cook for about 3-4 minutes on each side until golden brown.
