Fall Lentil Shepherd’s Pie Recipe

A comforting fall recipe that combines lentils with traditional shepherd’s pie ingredients for a healthy twist.

Ingredients

  • 1 cup green lentils
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 cups mashed potatoes
  • 1 cup frozen peas

Instructions

  1. In a pot, combine lentils and vegetable broth. Bring to a boil and then simmer until lentils are tender.
  2. In a skillet, heat olive oil and sauté the onion, carrots, and celery until soft. Add garlic, thyme, and rosemary and cook for another minute.
  3. Stir in the cooked lentils and peas, then transfer to a baking dish.
  4. Top with a layer of mashed potatoes and smooth it out.
  5. Bake at 400°F for 25-30 minutes until the top is golden brown.

Notes

  • For a vegan option, use plant-based mashed potatoes.
  • You can add any other vegetables you have on hand.
