Fall Apple Cider Stew Mash

A warm and hearty stew that combines the flavors of fall with the sweetness of apple cider.

  • 4 cups apple cider
  • 2 pounds potatoes, diced
  • 1 pound carrots, sliced
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 cups cooked chicken, shredded

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add diced potatoes and sliced carrots. Cook for about 5 minutes, stirring occasionally.
  3. Pour in apple cider and season with cinnamon, nutmeg, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes, or until vegetables are tender.
  5. Stir in the cooked chicken and cook for an additional 5 minutes.
  6. Serve warm, garnished with fresh herbs if desired.
