  • 1 pound turkey bacon
  • 2 cups potatoes, diced
  • 3 cups carrots, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme

  • 1/2 teaspoon black pepper
  • 1 cup apple slices

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, add onion and garlic, sauté until soft.
  3. Add potatoes, carrots, and apple cider; bring to a boil.
  4. Reduce heat and simmer until vegetables are tender.
  5. Stir in thyme, salt, and pepper. Add apple slices and crumbled bacon.
  6. Cook for an additional 5 minutes and serve warm.
