  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops, cleaned
  • 2 cups spinach, fresh
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 cups marinara sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, sauté garlic in olive oil until fragrant. Add shrimp and scallops; cook until opaque.
  4. In a baking dish, layer noodles, ricotta, seafood, spinach, and marinara sauce.
  5. Sprinkle mozzarella and Parmesan on top. Repeat layers until ingredients are used, ending with cheeses.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden.
  7. Garnish with parsley before serving.

Notes

  • For extra flavor, add Italian herbs to the cheese mixture.
  • Let the lasagna sit for 10 minutes before slicing.
