- 2 cups plain yogurt
- 1 cup sugar
- 3 eggs, separated
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 tablespoon cornstarch
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the yogurt, sugar, and egg yolks until well combined.
- Add lemon juice, vanilla, salt, and cornstarch, and mix until smooth.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the yogurt mixture, being careful not to deflate the whites.
- Pour the mixture into a greased souffle dish and smooth the top.
- Bake for 25-30 minutes or until the souffle is golden and set.
- Allow to cool slightly before serving. Enjoy!
