Easy Lasagna Soup

A comforting and quick-to-make soup blending the flavors of classic lasagna with turkey bacon.

  • 6 slices turkey bacon
  • 1 pound ground turkey
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop into pieces.
  2. Add ground turkey to the pot and cook until browned.
  3. Add onion and garlic, cooking until softened.
  4. Stir in crushed tomatoes, chicken broth, oregano, and basil. Bring to a boil.
  5. Add broken lasagna noodles and simmer until noodles are tender.
  6. Stir in ricotta cheese and half the mozzarella until melted.
  7. Serve topped with remaining mozzarella and Parmesan.

Notes

  • This recipe can be easily doubled for a larger crowd.
  • Substitute the turkey bacon with regular bacon for a different flavor.
