  • 6 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 package gingerbread cookies
  • 2 tablespoons cocoa powder

Instructions

  1. In a shallow dish, mix the brewed coffee and coffee liqueur.
  2. In a large bowl, beat mascarpone, heavy cream, sugar, vanilla, ginger, cinnamon, and nutmeg until thick and creamy.
  3. Dip each gingerbread cookie in the coffee mixture and layer them in a serving dish.
  4. Spread a layer of the mascarpone mixture over the cookies.

  6. Refrigerate for at least 4 hours or overnight.
