Ingredients

  • 1 cup brewed coffee
  • 1/2 cup coffee liqueur
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 8 to 10 gingerbread cookies
  • 2 tablespoons cocoa powder

Instructions

  1. In a shallow dish, combine brewed coffee and coffee liqueur.
  2. In a bowl, whip heavy cream until soft peaks form.
  3. In another bowl, mix mascarpone cheese, powdered sugar, vanilla extract, ginger, and cinnamon until smooth.
  4. Fold whipped cream into the mascarpone mixture gently.
  5. Quickly dip gingerbread cookies into the coffee mixture, then layer them in a serving dish.
  6. Spread a layer of the mascarpone mixture over the cookies.
  7. Repeat the layers until all ingredients are used, finishing with the mascarpone on top.
  8. Dust with cocoa powder before serving.
