Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 carrot, grated
  • 1 cup spinach, chopped
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying

Instructions

  1. Rinse the quinoa under cold water and then combine with water in a saucepan. Bring to a boil, reduce heat, and simmer for 15 minutes until water is absorbed. Let it cool.
  2. In a skillet, heat oil over medium heat. Sauté onion and garlic until soft.
  3. In a large bowl, mix cooked quinoa, sautéed onion and garlic, grated carrot, chopped spinach, breadcrumbs, egg, cumin, salt, and black pepper.
  4. Shape the mixture into patties.
  5. In a skillet, heat oil and fry the patties until golden brown on both sides.
  6. Serve warm with your favorite sauce or dip.

  • For a vegan option, substitute the egg with a flaxseed meal mixture.
