- 2 cups water
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 carrot, grated
- 1 cup spinach, chopped
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
- Rinse the quinoa under cold water and then combine with water in a saucepan. Bring to a boil, reduce heat, and simmer for 15 minutes until water is absorbed. Let it cool.
- In a skillet, heat oil over medium heat. Sauté onion and garlic until soft.
- In a large bowl, mix cooked quinoa, sautéed onion and garlic, grated carrot, chopped spinach, breadcrumbs, egg, cumin, salt, and black pepper.
- Shape the mixture into patties.
- In a skillet, heat oil and fry the patties until golden brown on both sides.
