Damn Good Vegan Lentil Soup

A comforting and hearty vegan lentil soup recipe that is perfect for any season.

Ingredients

  • 1 cup lentils
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Stir in the garlic, cumin, and smoked paprika, and cook for another minute.
  4. Add the lentils, vegetable broth, and diced tomatoes to the pot.
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes until the lentils are tender.
  6. Stir in the spinach and cook until wilted.
  7. Season with salt and pepper to taste. Serve hot.
