Cucumber Shrimp Salad

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups cucumbers, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cucumbers, red onion, and dill.
  2. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Add the shrimp to the salad bowl.
