Ingredients

  • 3 pounds chuck roast
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 4 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 sprigs fresh thyme

Instructions

  1. Season the chuck roast with salt and pepper.
  2. In a large skillet, brown the roast on all sides over medium heat.
  3. Place the roast in the crockpot and add the beef broth, Worcestershire sauce, carrots, potatoes, onion, and garlic.
  4. Add thyme sprigs on top.
  5. Cover and cook on low for 8 hours or until the meat is tender.
  6. Remove the roast and let it rest before slicing.
  7. Serve with vegetables and broth.
