- 1 pound boneless, skinless chicken breasts
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup frozen peas
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 package refrigerated pie crusts
- Place chicken breasts at the bottom of the crock pot.
- Add carrots, celery, and peas over the chicken.
- In a bowl, mix cream of chicken soup, chicken broth, onion powder, garlic powder, thyme, salt, and pepper. Pour over the ingredients in the crock pot.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before serving, prepare the pie crusts according to package instructions.
- Shred the chicken in the crock pot and stir to combine.
- Pour the filling into a pie crust and top with the second crust. Seal edges and cut slits for ventilation.
- Bake in the oven at 425°F for 30 minutes or until golden brown.
Notes
- For a thicker filling, add a tablespoon of cornstarch mixed with water before cooking.
- Use leftover rotisserie chicken for a quicker option.
