Crock Pot Chicken Pot Pie

  • 1 pound boneless, skinless chicken breasts
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup frozen peas
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package refrigerated pie crusts

Instructions

  1. Place chicken breasts at the bottom of the crock pot.
  2. Add carrots, celery, and peas over the chicken.
  3. In a bowl, mix cream of chicken soup, chicken broth, onion powder, garlic powder, thyme, salt, and pepper. Pour over the ingredients in the crock pot.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. About 30 minutes before serving, prepare the pie crusts according to package instructions.
  6. Shred the chicken in the crock pot and stir to combine.
  7. Pour the filling into a pie crust and top with the second crust. Seal edges and cut slits for ventilation.
  8. Bake in the oven at 425°F for 30 minutes or until golden brown.

Notes

  • For a thicker filling, add a tablespoon of cornstarch mixed with water before cooking.
  • Use leftover rotisserie chicken for a quicker option.
