Enjoy these delicious crispy zucchini fries that are both healthy and easy to make in the oven.

Ingredients

  • 2 medium zucchinis
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchinis into fry-shaped pieces.
  3. In a bowl, combine breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini stick first in the egg, then in the breadcrumb mixture.
  6. Place on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes until golden brown and crispy.

Notes

  • For extra crunch, broil for the last 2 minutes of baking.
  • Serve with your favorite dipping sauce.
