Crispy Egg Salad

A deliciously easy and unique take on traditional egg salad, enhanced with crispy turkey bacon.

  • 6 hard-boiled eggs
  • 4 slices turkey bacon
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chopped green onions
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Begin by cooking the turkey bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
  2. In a bowl, chop the hard-boiled eggs and add mayonnaise, Dijon mustard, apple cider vinegar, green onions, salt, and pepper. Mix until well combined.
  3. Crumble the crispy turkey bacon and gently fold it into the egg mixture.
  4. Serve chilled or at room temperature, optionally on toasted bread or in lettuce wraps.

Notes

  • For an extra crunch, add chopped celery to the egg salad.
