- 2 medium zucchinis
- 1 teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- Grate the zucchinis and place them in a clean towel. Squeeze out excess moisture.
- In a bowl, mix the grated zucchini with salt and let it sit for 10 minutes.
- In another bowl, combine the flour, eggs, Parmesan, parsley, garlic powder, and black pepper.
- Add the zucchini mixture to the bowl and stir until well combined.
- Heat olive oil in a skillet over medium heat and scoop portions of the batter into the skillet.
- Cook for 3-4 minutes on each side until golden brown.
- Remove and drain on paper towels before serving.
Notes
