Crispy and Easy Zucchini Fritters Recipe

A delicious and healthy recipe for crispy zucchini fritters that make a perfect guilt-free snack.

  • 2 medium zucchinis
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil

Instructions

  1. Grate the zucchinis and place them in a clean towel. Squeeze out excess moisture.
  2. In a bowl, mix the grated zucchini with salt and let it sit for 10 minutes.
  3. In another bowl, combine the flour, eggs, Parmesan, parsley, garlic powder, and black pepper.
  4. Add the zucchini mixture to the bowl and stir until well combined.
  5. Heat olive oil in a skillet over medium heat and scoop portions of the batter into the skillet.
  6. Cook for 3-4 minutes on each side until golden brown.
  7. Remove and drain on paper towels before serving.

Notes

  • Serve with a yogurt dip for added flavor.
  • Make sure to squeeze out as much moisture as possible from the zucchini for crispy fritters.
