- 2 cups grated zucchini
- 1 cup all-purpose flour
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped onion
- 1/4 cup olive oil (for frying)
- Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 10 minutes to extract excess moisture.
- In a large bowl, combine the drained zucchini, flour, eggs, black pepper, garlic powder, parmesan cheese, parsley, and onion. Mix well to form a batter.
