A delicious and simple recipe for making crispy zucchini fritters that are perfect as a snack or appetizer.

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped onion
  • 1/4 cup olive oil (for frying)

Instructions

  1. Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 10 minutes to extract excess moisture.
  2. In a large bowl, combine the drained zucchini, flour, eggs, black pepper, garlic powder, parmesan cheese, parsley, and onion. Mix well to form a batter.
  3. Heat olive oil in a frying pan over medium heat.
  4. Spoon portions of the batter into the pan, flattening them slightly with a spatula.
  5. Cook for 3-4 minutes on each side or until golden brown and crispy.
  6. Remove fritters from the pan and place them on a paper towel to drain excess oil.

Notes

  • Serve warm with a dipping sauce of your choice.
