  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent.
  2. Add the garlic and bell pepper, cooking for another 2-3 minutes.
  3. Stir in the ground cumin and chili powder, cooking until fragrant.
  4. Add the diced tomatoes and vegetable broth, bringing the mixture to a boil.
  5. Reduce heat and add the black beans and corn, simmering for 10 minutes.
  6. Stir in the heavy cream or coconut milk. Season with salt and pepper.
  7. Serve hot, garnished with fresh cilantro and tortilla strips.
