  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 1 cup bell peppers, diced
  • 1 cup heavy cream
  • 2 teaspoons red pepper flakes
  • 1 teaspoon garlic powder
  • Salt to taste
  • 1/4 cup parsley, chopped

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and add the diced chicken. Cook until browned and cooked through.
  3. Add the cherry tomatoes, zucchini, and bell peppers to the skillet. Cook for about 5 minutes until vegetables are tender.
  4. Pour in the heavy cream and stir in the red pepper flakes and garlic powder. Simmer for 3-4 minutes.
  5. Add the cooked pasta to the skillet and toss to combine. Season with salt to taste.
  6. Serve hot, garnished with chopped parsley.

Notes

  • Adjust the level of spice by adding more or less red pepper flakes.
  • This dish can be made ahead and stored in the refrigerator.
