- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- In a large skillet, heat olive oil over medium heat.
- Season chicken breasts with salt and pepper, then add them to the skillet. Cook until browned on both sides, about 6-7 minutes per side. Remove the chicken and set aside.
- In the same skillet, add diced onions and garlic. Sauté until translucent.
- Add the rice, chicken broth, heavy cream, thyme, and paprika to the skillet. Stir well.
- Return the chicken to the skillet, cover, and reduce heat to low. Cook for 20-25 minutes or until rice is tender and chicken is cooked through.
