  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the chopped cauliflower with olive oil, salt, and pepper on a baking sheet.
  3. Roast in the oven for about 25 minutes until golden and tender.
