  • 1 cup queso cheese
  • 1 can enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken with half of the queso cheese.
  3. Warm the tortillas in a skillet until soft.
  4. Fill each tortilla with the chicken mixture and roll them up.
  5. Place the rolled tortillas in a baking dish and cover with enchilada sauce.
  6. Sprinkle the remaining queso cheese and shredded cheese on top.
  7. Bake for 20 minutes or until the cheese is bubbly.
