  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup corn kernels
  • 1 cup diced potatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, add onions and garlic and sauté until translucent.
  3. Add chicken ham and cook for 5 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Add potatoes and corn, then reduce heat and simmer until potatoes are tender.
  6. Stir in heavy cream and season with paprika, salt, and pepper.
  7. Serve hot, topped with crumbled turkey bacon.

Notes

  • For a vegetarian version, substitute turkey bacon with smoked tempeh.
  • This soup can be made ahead and reheated, but the cream may separate a bit.
