- 4 slices turkey bacon
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup corn, frozen or canned
- 2 cups potatoes, diced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add the diced onion and minced garlic to the pot, sauté until translucent.
- Stir in the chicken broth and bring to a simmer.
- Add the diced potatoes and cook until tender.
- Reduce the heat and stir in the heavy cream and corn.
- Add the seasonings and crumble the turkey bacon back into the soup. Stir well and heat through before serving.
Notes
