Creamy Cowboy Soup Recipe

  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup corn, frozen or canned
  • 2 cups potatoes, diced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the diced onion and minced garlic to the pot, sauté until translucent.
  3. Stir in the chicken broth and bring to a simmer.
  4. Add the diced potatoes and cook until tender.
  5. Reduce the heat and stir in the heavy cream and corn.
  6. Add the seasonings and crumble the turkey bacon back into the soup. Stir well and heat through before serving.

Notes

  • Add extra chili flakes for a spicy kick.
  • For a vegetarian version, omit turkey bacon and use vegetable broth.
