  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 can diced tomatoes with green chilies
  • 1 cup corn
  • 1 cup heavy cream
  • 2 cups shredded cheese
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add chicken and cook until browned.
  4. Stir in spices and cook for an additional minute.
  5. Pour in the chicken broth and add tomatoes and corn.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Remove chicken, shred it, and return it to the pot.
  8. Stir in the heavy cream and cheese until melted.
  9. Garnish with cilantro and serve.
