Ingredients

  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 3 cups mixed vegetables (carrots, peas, corn)
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup biscuit dough, shredded

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Stir in the mixed vegetables and cook for another 5 minutes.
  4. Pour in the vegetable broth, thyme, and rosemary; bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in the heavy cream, salt, and pepper.
  7. Add the shredded biscuit dough and cook for an additional 5 minutes until dough is cooked through.
  8. Serve hot.

Notes

  • For a vegan version, replace heavy cream with coconut milk.
