Cottage Cheese Pumpkin Muffins

  • 1 cup pumpkin puree
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the cottage cheese, pumpkin puree, and eggs until well combined.
  3. In another bowl, mix the dry ingredients: flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  5. Fill muffin cups 2/3 full with the batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
