Cottage Cheese and Veggie Bake

A delicious and easy-to-make cottage cheese and veggie bake that your whole family will love.

Ingredients

  • 2 cups cottage cheese
  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1 cup chopped zucchini
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded cheese
  • 4 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the cottage cheese, spinach, bell peppers, zucchini, garlic powder, onion powder, and salt.
  3. In another bowl, beat the eggs and then stir them into the vegetable mixture.
  4. Pour everything into a greased baking dish and sprinkle the shredded cheese on top.
  5. Bake for 30-35 minutes or until the top is golden and the center is set.
  6. Let it cool slightly before serving.
